Fried Chicken

FRIED CHICKEN

WHAT YOU NEED:

 

CHICKEN MARINADE

Procedure:
  1. Dissolve 17.5 grams of B & S Marinade Mix – J in 160 grams of ice-cold water (Note: this is good for 1 kilo of chicken cut–ups).
  2. Marinate overnight or tumble meat with marinating solution for 10-15 minutes.

 

 

CHICKEN BATTER

Procedure:
  1. Dissolve batter mix in ice cold water.
  2. Mix thoroughly until no lumps are visible.
  3. Dip chicken in batter and coat evenly.
  4. Let excess batter fall off.
  5. Roll battered chicken in breading.
  6. Fry directly or freeze.

 

CHICKEN BREADING

 Procedure:
  1. Roll marinated and/or with batter in B & S Breading Mix.
  2. Fry chicken pieces at 180ºC for 10 – 13 minutes.
