FRIED CHICKEN
WHAT YOU NEED:
CHICKEN MARINADE
Procedure:
- Dissolve 17.5 grams of B & S Marinade Mix – J in 160 grams of ice-cold water (Note: this is good for 1 kilo of chicken cut–ups).
- Marinate overnight or tumble meat with marinating solution for 10-15 minutes.
CHICKEN BATTER

Procedure:
- Dissolve batter mix in ice cold water.
- Mix thoroughly until no lumps are visible.
- Dip chicken in batter and coat evenly.
- Let excess batter fall off.
- Roll battered chicken in breading.
- Fry directly or freeze.
CHICKEN BREADING
Procedure:
- Roll marinated and/or with batter in B & S Breading Mix.
- Fry chicken pieces at 180ºC for 10 – 13 minutes.
