PROCEDURE:
- Dissolve special bread blend & sugar in the required amount of water.
- Add the remaining ingredients except shortening and B.O.S. Mix for 2 minutes.
- Then, add the shortening and B.O.S. and mix at full speed until the dough becomes smooth and elastic.
- Rest dough in bulk for 5 to 10 minutes. Scale at 190 g dough weight and mold. Rest another 5 to 10 minutes.
- Flatten the dough, add filling and mould. Proof to at least double in size and brush with egg wash.
- Bake at 180°C for 15 to 20 minutes until light brown.
- Remove from heat, brush together egg wash, top with grated cheese, and continue baking until golden brown.
