PROCEDURE: No – Time Dough Method
  1. Dissolve special blend & sugar in the required amount of water in the recipe.
  2. Add the rest of the ingredients except shortening. Mix at low speed for 2 minutes.
  3. Add shortening & continue mixing to full gluten development.
  4. Rest dough in bulk for 5 to 10 minutes. (Cover dough with moist cloth).
  5. Scale dough to desired weight. Round and rest for 10 minutes.
  6. Flatten dough and form into baston shape.
  7. Deposit dough into a well greased loaf pan and proof.
  8. Bake at 180ºC to golden brown or until done.

 

Note:
  • The (+/-) means more or less. In the recipe, water can be adjusted depending on the capacity of the dough to absorb water and develop gluten during mixing.
