PROCEDURE:
- Combine premix, yeast, and water. Mix to form a dough.
- Add shortening and continue mixing until the dough is smooth and elastic or to full development.
- Scale the desired dough weight. Round and rest for 10 minutes.
- Flatten dough to 1/8 inch thick. Then transfer to prepared pan (dusted with semolina flour – not oil).
- Dock and bake at 200˚C for 7-11 minutes or until golden brown.
- Remove from heat. Add sauce and toppings and bake at 180˚C for 5 – 7 minutes.
Note:
- The (+/-) means more or less. In the recipe, water can be adjusted depending on the capacity of the dough to absorb water and develop gluten during mixing.
