PROCEDURE: Straight Dough – Remix Method
- Dissolve the standard bread blend, sugar, and ube powder with the required amount of water.
- Add other ingredients except shortening, margarine, and oil. Then, mix for 2 minutes at low speed.
- Add shortening, margarine, and oil and continue mixing to incorporate. Do not fully develop dough yet.
- Rest dough in bulk for 1 hour.
- Remix until smooth & elastic or to full gluten development.
- Cut/scale to 30 grams dough weight, put fillings, then seal.
- Roll into breadcrumbs & proof to at least double in size.
- Bake at 180°C for 18-20 minutes or until done.
Note:
- The (+/-) means more or less. In the recipe, water can be adjusted depending on the capacity of the dough to absorb water and develop gluten during mixing.
