PROCEDURE:
Filling:
- Dissolve ube powder in water.
- Add ube mixture into the custard crème filling mix. Mix until combined.
- Cook the mixture in a hot water bath or a double boiler with constant stirring until the desired thickness is achieved.
Base:
- Dissolve ube powder and ice-cold water.
- Combine all ingredients except shortening.
- Mix for 2 minutes at low speed.
- Add shortening. Mix at full gluten development.
- Scale at 70 grams dough weight.
- Rest for 5 to 10 minutes.
- Flatten dough and add filling. Seal.
- Proof for 1 hour to 1.5 hours.
- Steam for 18 to 20 minutes.
